Asian Style Chicken and Cabbage
Since my diet has become even more restricted these days I've had to get much more creative with fewer and fewer ingredients. Unfortunately, one of the first things that had to go was Asian cuisine, which I miss every day. Plum sauce and ginger is a good combo that helps create the illusion that you may actually be eating some good take-out instead of a low-sodium, low-sugar, gluten-free delight with no complex starches. Apple-Cranberry Strudel (German)
I made these strudels for my family's annual Oktoberfest 2008, and everyone agreed they are sinfully delicious. I say this because a great deal of butter is used in this recipe. The strudels have a crispy, buttery phyllo dough exterior with a juicy, semi-tart apple filling seasoned with cinnamon, cloves and nutmeg. I use Northern Spy apples for the filling, but they are difficult to find. Macintosh, Cortland or Granny Smith would do just as well. Red Hummus
My husband and I discovered red bean hummus at a local restuarant, after finding a basic recipe on the internet I spent some time playing with the flavors to expand the recipe. This recipe using roasted red pepper is a beautiful red color and I recommend topping with a small amount of olive tapenade to really enhance the flavors nicely. I used half of a four ounce jar of roasted red peppers, however if you prefer you can use fresh roasted red peppers. -- posted by Erindipity

Meatballs for Stocking up Freezer
Make and add to various recipes... like tator tots, drained green beans, and cream of mushroom soup. We love that and so easy! Meatballs are good with leftover beef gravy and mashed potatoes, too. I freeze portions in separate zip lock bags, defrost, and have an easy supper. I am guessing at the exact servings-I can eat 5 or 6 meatballs. I use my oven to brown my meatballs-lazy me- but you can do it on top of your stove if you prefer. -- posted by WiGal

Kathy's Quick and Easy Eggplant Parmigiana
I just love Eggplant Parm but didn't like having to bread the eggplant in bread crumbs so I eliminated that step and it is just as wonderful. I also eliminated the 'salt and sit' step in most recipes to take the extra water from the eggplant. I find that step to make the dish dry and tough.
